I was surprised again when I got them home & started slicing them up. I thought a carrot that size would absolutely need cooking – but I had a slice raw, and it was good & sweet enough that I had a few more.
I don’t know WHAT this farmer is doing, but whatever he’s doing, it works!

We made “carrot steaks” with them, which tasted awesome. Pan seared with butter salt and pepper. Yum!

It’s a Red Core Chantenay carrot that is more often used in production then sold directly in stores. The yield for machine processing is higher and “Baby Carrots” are often cut from these.
